it's been a while since i've shared a recipe on the ol' bloggy.
last friday we had our little small group. each couple brings part of dinner. so the main course was bbq.
yum. and we had a side dish.
now potato salad is usually a no brainer side dish for bbq - at least in GA.
but i hate traditional potato salad.
so instead, i made baked potato salad.
Imagine a yummy loaded baked potato, but served cold.
It's delicious!
Now, I don't have exact measurements - most of it is all done to taste.
But it's just too good not to share!
Ingredients:
red potatoes - 8 - 10
sour cream 16oz
cream cheese 8oz
cheddar cheese 2 cups
green onions 3-green parts only
garlic powder - 1 - 2 tsp
salt - 1/4 tsp
pepper - 1/4 tsp
dill weed - 1 tsp
I made a large batch that served 8 adults.
Boil 8 potatoes (skin on) until a fork goes through them easily. Drain and let cool.
In a mixing bowl, mix all other ingredients (reserve just a little shredded cheese and green onions for garnish). Once potatoes are completely cooled, chop into bite size pieces. Mix in with other ingredients. Cover and let refrigerate for about 2 hours. Serve cold.
Be ready for your tastebuds to burst with excitement!
