i'm a foodie, there's no doubt about it.
i love food and i love cooking/baking/combining! the art of it is wonderful.
this past week i've been playing a lot on pinterest.
chris and i have started a low GI diet.
basically it's like a clean lower carb diet. this is the diet i'm supposed to be on to help with pcos/fertility issues.
so i used pinterest recipes to make my grocery list this week.
i am so very excited by some of the things i've created!
first off, i'm not a big fan of yogurt. but a certain flavor caught my eye at the store and i'm so glad i caved in and bought it. it's chobani greek yogurt bite - coffee with dark chocolate chips. it is ah-mazing! i am ridiculously excited to welcome it to my life!
while we're on the yogurt topic, you can make so much with greek yogurt.
so i bought some...the plain kind.
first up, i found a recipe for chocolate frozen yogurt.
it's literally 3/4 cup of greek yogurt, 2 TBSP of unsweetened cocoa powder (i used dark chocolate), 2 tsp of sweetener, 1 tsp of vanilla, and a pinch of salt. Now it tasted quite scrumptious after i mixed it up, but i was so excited to have it frozen! i love sweets, and this is a super guilt free after dinner option. add a few fresh berries and it magic!
one of my favorite things as a kid (and sometimes now) was a chocolate frosty from wendy's.
well guess what? i found a recipe to make it out of yogurt and banana. whah???
and the last thing i've made this week from pinterest was a chicken salad.
i'm very picky when it comes to chicken salad. i do not like it chunky or too mayonaisey at all.
the site for this recipe sounded like something i'd love. and it was.
i tweaked the recipe just a bit.
one thing to know about me....i do NOT eat meat on the bone. nope, not ever. BUT i know that the bone and skin of chicken gives a lot of flavor when roasting and keeps it from drying out.
so i bought some split chicken breasts. i find it amazing how much cheaper chicken is on the bone. i paid a little over $4 for 3 huge breasts. i rubbed them down with olive oil, garlic powder, salt and pepper and threw them on a broiler pan in an oven of 350 degrees. i just cooked until the inside temp reached 165.
for the "sauce" i used duke's light mayo, lemon juice, hot sauce, poppy seeds, parsley, salt and pepper. i really just mixed these up to taste. once i mixed it all together, i added some celery and walnuts.
i went ahead and cooked all 3 of the breasts, but since i'm the only one in the house that eats chicken salad, i saved most of the chicken to use in recipes throughout the week (taco salad, quesadillas, chicken wraps, etc).the great thing about this is i can season the chicken for whatever i'm making as i go, so i'm not stuck with a special flavor of a lot of chicken to try and fit into other recipes.
seriously, i was so excited to find some truly guilt free meals to make this transition a bit easier!
